Andy’s Peanut Butter Pie
2 packs of creamy soft tofu (300 g each)
1 cup peanut butter
1/2 cup honey
¼ cup water
1 tsp vanilla
1/8 tsp salt
2 graham pie shells
2 cup apple granola mix
Cool Whip (optional)
Directions:
1. Put the tofu, peanut butter, honey, water vanilla and the salt into the blender.
2. Blend it till it’s smooth. Pour the filling equally into the 2 graham shells.
3. Add the apple granola mix into it (approximately 1 cup in each shell or more) stir until it is mixed in and tap it down.
4. Once the granola has absorbed some of the liquid and hardened, you can decorate it with cool whip.
5. Cover and keep refrigerated until served.

Michael’s Date Cake
1 1/2 cups water
1/2 cup margarine or butter
BOIL WATER AND MARGARINE THEN ADD:
1 cup chopped dates
1 tsp baking soda
LET COOL WHILE MIXING:
2 eggs
1 cup sugar
SIFT TOGETHER THEN ADD TO EGG/SUGAR MIXTURE:
11/2 cups flour
3/4tsp baking soda
¼ tsp salt
MIX FLOUR AND EGG MIXTURE WITH CHOPPED DATE MIXTURE AND POUR INTO GREASED CASSEROLE
SPRINKLE ON TOP:
1/2 cup sugar
2 cups chocolate chips
1/2 cup chopped walnuts
BAKE 350 DEGREES —45 MINUTES

Tony’s Crepes
1 cup all-purpose flour
4 eggs
1 cup milk
1/4 teaspoon salt
2 tablespoons oil
DIRECTIONS:
1. In a large mixing bowl, whisk together the flour and the eggs.
2. Gradually add in the milk, stirring to combine. Add the salt and oil, beat until smooth.
3. Heat a lightly oiled griddle or frying pan (preferably cast iron) over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
4. Cook the crepe for about 2 minutes, until the bottom is light brown.
5. Loosen with a spatula, turn and cook the other side. Serve hot.
6. Add one teaspoon oil to pan and coat the surface with a circular motion for each crepe.
7. Can be eaten plain, with sugar; sugar and sour cream, sugar and cottage cheese; sugar and ground nuts; apple sauce; jams; chocolate powder; ground coconuts and anything else you can imagine.

Mercedes Cranberry Pumpkin Loaf with Flaxseed
1/2 cup whole wheat pastry flour
1/2 cup unbleached all-purpose flour
1/2 cup ground flaxseed
2/3 cup packed light brown sugar
1 tsp baking soda
1/2 tsp salt
2 large eggs
1 cup canned pure pumpkin
1/2 cup unsweetened applesauce
1/4 cup canola oil
1/4 cup apple juice
1/2 tsp ground cinnamon and ground ginger
¼ tsp ground nutmeg
1 cup dried cranberries
Directions:
1. In large bowl, stir together two flours, flaxseed, sugar, baking soda and salt.
2. In medium bowl, lightly whisk eggs. Whisk in pumpkin, applesauce, oil, apple juice, cinnamon, ginger and nutmeg. Stir in cranberries.
3. Add to flour mixture; mix well with wooden spoon. (Don’t beat or over mix).
4. Pour batter into lightly greased or oiled 8” x 4” loaf pan.
5. Bake in preheated 350 degrees over for 70 minutes or until inserted toothpick in centre of loaf comes out clean.
6. Cool in pan on wire rack 15 minutes. Remove bread from pan to cool completely on rack before slicing.

Shirley’s Coconut Bread Pudding
1 1/2 Sandwich Loaves
1 Tin Condensed Milk
1 Tin Evaporated Milk
2 Cups Water
¼ Cup Butter
1 Cup Sugar
3 Eggs
1 Teaspoon Mixed Spice
2 Teaspoons Vanilla Essence
¼ Cup Raisins
1/2 Cup Maraschino Cherries (halved)
1 1/2 Cups Grated Coconut
Directions:
1. Preheat oven to 360°F/170°C.
2. In a large mixing bowl, soak bread in a mixture of condensed and evaporated milk and water.
3. Cream butter and sugar.
4. Add eggs, spice, vanilla, raisins, cherries and coconut. Combine with soaked bread.
5. Pour in a large greased square dish.
6. Bake for 30-40 minutes.
Serve cold (30 servings)

Senka’s Cheesecake
Crust
1/2 cup graham crumbs
2 Tbsp unsalted butter, melted
1 packet Stevia
Directions:
Pour into cake mold and bake at 350 degrees for 5 minutes and let cool.
Cheese Filling
2 pkgs light Philadelphia Cream Cheese
1 can condensed milk
3 packages Knox gelatin
4 pints fruit (berries, canned peaches etc.)
1 tub Cool Whip (Light)
Directions:
1. Beat cream cheese with condensed milk.
2. Prepare 3 pkgs of Knox gelatine, as per directions on box.
3. Fold in 4 pints of fruit with prepared gelatin.
4. Add fruit mixture to cream cheese mixture and fold in 1 tub of Cool Whip.
5. Pour filling over crust and refrigerator for at least 4 hours. Slice and enjoy.

Ruth’s Banana Cake
2 cups flour
1 1/2 cups sugar
I tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
1 tsp vanilla
1/2 cup oil
1/3 cup milk
2 or 3 ripe bananas
2 eggs
3/4 cup semi-sweet chocolate chips
Orange juice
Pinch of cinnamon
Directions:
1. Preheat oven to 350° F.
2. Combine all ingredients and mix.
3. On a separate plate, mash bananas with fork and sprinkle with cinnamon (to taste). Add a few drops of orange juice.
4. Add rest of mixture.
5. Bake for 45-50 minutes.
Looks beautiful in a “Bundt” pan.

Yolanda’s Banana Bread
1 cup sugar
2 Tbsp Crisco
3 ripe mashed banana
2 Tbsp sour cream
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 cup nuts, chopped (optional)
1 egg
2 cups flour
Directions:
1. Cream sugar and Crisco until fluffy. Add bananas one at a time and cream well after each addition.
2. Add sour cream, egg and mix well. Add dry ingredients and mix well.
3. Grease and flour loaf pan and pour dough in.
4. Preheat over to 350 degrees. Bake for 1 hour or until tester comes out clean.

Gale’s Baklava
1 box Phyllo pastry
1/2 lb butter (1 lb if whole box of Phyllo is used)
Chopped walnuts (approximately 8 cups)
Directions:
Using a pastry brush, coat bottom of a 13” x 9” pan with butter and then lay 3 sheets of phyllo pastry on butter.
Paint the Phyllo with butter until it is completely covered – Sprinkle with walnuts.
Repeat layers as the first layers, with 3 sheets of Phyllo pastry, butter and walnuts.
On top layers, paint on the butter, but do not put walnuts on top. Carefully cut the Baklava into squares before it is baked.
Bake at 350 degrees for 1//2 hour or until Baklava is golden brown.
Syrup
2 cups sugar
1 1/2 cups water
2 drops lemon juice
Directions:
Put sugar and water into saucepan and bring to a boil.
Let syrup boil for 10 minutes.
Add 2 drops of lemon juice.
Pour syrup over Baklava and let it cool at room temperature. Enjoy.
