Janice’s Barley Lentil Soup

1 Tbsp (15 ml) vegetable oil (I use olive oil)
1 onion, chopped
2 cloves garlic, minced
1 large carrot, chopped
1 stalk celery, chopped
1 tsp (5 ml) dried thyme
1/4 tsp (1 ml) each salt and pepper
4 cups (1 L) vegetable stock
1 cup (250 ml) brown or green lentils
1/4 cup (50 ml) pot barley
1/4 cup (50 ml) chopped fresh parsley

Directions:
1. In a large saucepan, heat oil over medium heat; fry onion, garlic, carrots, celery, thyme, salt and pepper until softened, about 5 minutes.
2. Add vegetable stock, 2 cups (500 mL) water, lentils, and barley;
3. Bring to a boil.
4. Reduce heat, cover, and simmer until barley and lentils are tender, about 40 minutes.
5. Stir in the chopped parsley and serve.

Mikaela Triple Berry Shake

1/2 cup frozen mixed berries
1/2 small banana
1/2 cup soy milk
3/4 cup orange juice
2 scoops of protein powder
2 tsp of flaxseed oil (can get it from health food stores, etc)

Directions:
Combine all ingredients and blend on high for 90 seconds

MacKenzie Spanish Tortilla

2 Tbsp olive oil
2 onions, sliced
1 garlic clove, crushed
1 lb cooked waxy potatoes, sliced
6 eggs, beaten
3 Tbsp milk
1 3/4 cups mild cheddar cheese, grated
Salt and black pepper to taste

Directions:
1. Heat olive oil in large skillet over low heat.
2. Add onions and garlic and cook for 5 minutes until golden, then add cooked potatoes and heat through.
3. In large bowl beat eggs and milk, add the cheese and season lightly.
4. Add potatoes, onion and garlic to egg mixture. Stir well and return the pan to the heat.
5. Heat remaining oil in pan and return the potato and egg mixture to the pan and cook over low heat for 10 minutes.
6. Shake pan occasionally so that the underside does not stick too much.
7. Use wooden spoon to turn over the egg in the base of the pan, to allow the middle to cook through.
8. When the eggs have set, run spatula under the tortilla to loosen it and invert it onto a plate. Place back into skillet, uncooked side down and cook for an additional five minutes.

Madison’s Potato and Cheese Burgers

11/2 lb red or waxy potatoes, unpeeled
1 3/4 cups mild cheddar cheese, grated
1 red onion, finely chopped
2 Tbsp butter
Salt and pepper to taste

Directions:
1. Place potatoes in a large pot of water and bring to a boil.
2. Boil for about 20 minutes until the potatoes are just cooked but firm. Drain and cool.
3. Peel potatoes and grate them into a bowl. Add grated cheese, chopped onion and seasoning.
4. With wet hands shape into 6 rounds then press down with 2 fingers to form into burgers.
5. Heat butter in skillet over medium heat and cook burgers in 2 batches, using the remaining butter, until golden brown on both sides.

Gloria’s Cookie Cake

1 pkg Tea Biscuits
1 pkg vanilla pudding

Directions:
1. Make vanilla pudding according to package directions.
2. Place a layer of tea biscuits at the bottom of a pyrex and sprinkle biscuits with water.
3. Spread some pudding on biscuits.
4. Repeat layers ending with pudding (normally about 3 or 4 layers)
5. Refrigerate a few hours before serving.

Stephanie’s Banana Milkshake

Plain Soy milk 1 1/2 cups
1 Banana
Pinch of nutmeg
1/2 teaspoon of cinnamon
1 tablespoon of honey

1. Pour all ingredients into blender and blend until frothy.
2. Pour into glass and sprinkle extra cinnamon or grated chocolate on top to finish.

Sharon’s Black Bean Salsa

16 oz. can black beans (drained)
16 oz. can white corn (drained)
1/2 cup fresh chopped cilantro
1/4 cup chopped green onion
¼ cup chopped red onion
1/3 cup fresh lime juice
3 tbsp olive oil
1 tbsp cumin
1/2 cup fresh tomatoes (chopped)

Directions:
1. Mix all ingredients together except tomatoes.
2. Add tomatoes just before serving.

Roshan Sweet Rice

2 cups of rice
1 cup sugar
1/4 lb raisins
1/4 lb hand cut coconut
l Tbsp food colour (yellow, red or orange-pick one only)
1/2 lb unsalted butter

Directions:
1. Boil rice until 90% done.
2. Mix the food colouring of your choice.
3. Strain rice and keep aside.
4. Add butter to the now empty pot that was used to cook rice.
5. Brown raisins and coconut nicely.
6. Add the cooked rice and sugar, mix slowly.
7. Heat on low for 5 minutes.

Anna’s Pumpkin Cake

2 cups flour
2 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
2 cups sugar
1/2 cup vegetable oil
4 eggs
2 cups cooked or canned pumpkin
1/2 cup walnut pieces (optional)

Directions:
1. Preheat oven to 350-F.
2. In bowl, combine flour, baking soda, cinnamon and salt and set aside. In another bowl, combine sugar, oil, eggs and pumpkin.
3. Combine wet ingredients with dry and pour batter into a well greased bundtltube pan.
4. Bake 45-60 minutes.
5. Let cool for 10-15 minutes before removing from pan.
6. When complete cool, drizzle frosting and sprinkle with nuts if desired.

Frosting
2 tsp vanilla
1 3oz cream cheese
¼ cup melted butter or margarine
1 cup powdered sugar
Milk
Chopped nuts to garnish

Beat together softened cream cheese, butter and powdered sugar. Beat in vanilla. If needed, add enough milk (1 tsp at a time) to make pouring consistency.

Kristie’s Pumpkin Bars

4 eggs
1 cup oil
1 (16 oz) can pumpkin
1 2/3 cups sugar
2 cups flour
2 tsp baking powder
2 tsp cinnamon
1 tsp baking soda
1 tsp salt

Directions:
1. Cream eggs, oil, pumpkin and sugar together.
2. Sift together the remaining ingredients & add to the creamed mixture.
3. Bake in a 1 5”xl 0” pan at 350 degrees for 25-30 minutes.
4. Cool and frost.

Frosting
3 oz cream cheese
1/2 cup margarine
1 tsp lemon juice
1 tsp vanilla
2 cups powdered sugar
Cream all ingredients till lump free.
